If you think I had forgotten you, you think wrong. Somehow life has been real busy and my laptop and hence the blog has not been able to get the time I usually have for it. But, I could not NOT post my last post for 2012.

2012 came with many firsts. I completed my first ever triathlon. The blog got its own domain name. I went gluten free for a month, raw for a week. Tried out several new recipes. Things changed for the better for two of my best friends. Travelled to New York, Allahabad, Taj Mahal and of course Delhi. Certain things became clearer, and I hope 2013 brings clarity in the other things that yet confuse me. 2012 was a year of ups and downs, but then that’s how life is and 2013 should also have its share- but here’s hoping the ups more than make up for the downs that come.

We had a gathering yesterday at my in-laws place for lunch. I had planned to make a warm apple cake and tiramisu for dessert, but since our train got delayed by 12 hours and I had managed to catch a cold during my trip, I dropped the original plan and adapted it to make tiramisu shots instead (recipe adapted from here).

These would be great at your New Year’s celebration table (though for some this post might come a tad bit late, thanks again to my busy schedule here) and do not require much time in the kitchen. The tiny servings are perfect and in line with your friends’ new year resolution to lose weight!

I did add a little more booze than called for, mostly because when I tasted the cream and espresso mix, thanks to the cold I could not taste much. I still liked it. So did many others. But then I like anything boozy. And I guess so does the company I stay in. In case too much alcohol is not your thing, reduce the amount to your liking. I also had to sub the kahlua for french brandy, since that’s all I had.

Since I was making this for a gathering of 30 plus people, I used disposable mini shot glasses. If you are in Delhi, you can find them in INA market. They make for a lovely presentation and the size is perfect for the quick pick me up!

Ingredients
For the Mascarpone filling:
  • 2 8 oz (226 gms each) containers Mascarpone cheese
  • 1 tablespoon espresso
  • 1 tablespoon Kahlua
  • 1 tablespoon Irish cream liqueur (optional)
For the Whipped Cream:
  • 200 ml whipping cream
  • ½ teaspoon vanilla extract
  • 2 tablespoon powdered sugar (in case using the non dairy whipping cream, they usually have sugar in them, so you can skip it out)
For the lady fingers:
  • approximately 12 lady fingers (can be more depending on the size of glass), cut in half/quarters or smaller (depending on the size of the glass)
  • 4 shots espresso
  • 1 tablespoon Kahlua
  • For Garnish:
  • Cocoa powder ( I used chocolate sprinkles and chocolate shavings)
Instructions
  1. Combine all ingredients for the Mascarpone filling in a large bowl. Mix well.
  2. With a hand held whisk, beat the cream with the vanilla and sugar until cream is whipped.
  3. Gently fold in the cream mixture into the Mascarpone mixture.
  4. Dip each lady finger half in the coffee and liqueur mixture.
  5. For the layering, add a coffee soaked cookie to the glass and then a tablespoon of the Mascarpone mixture. Alternate layers until the glasses are filled. I only got two layers in my shot glasses.
  6. Garnish with cocoa powder/chocolate shavings.
