Tofu Burger on Homemade Spinach Buns-1

So as I mentioned before I have been struggling with writing posts these days. And I feel really bad because I have a ton of great recipes in the line up. But I just cant think of what to write.

Yup, there are certain things going on- I am going to India soon (and am pretty pretty excited about that!). I am also making sure I lose weight before I reach India, lest my mom comments that “what have I done to my body!” like she did the first time I went to India after marriage. That means gymming in the morning and running in the evening. But the chocolates in the house really aren’t helping. Whatever I burn by sweating I gain by eating the darn chocolates. Each time we go to the grocery store V really tries to dissuade me from buying them because he knows I will come back to him later and blame him for letting me go through the whole packet of peanut M&Ms on my own (but oh gawd they are sooooo good, and yes I am that kind of wife- I blame my husband for EVERYTHING). Of course I don’t listen then or to the voice in my head telling me not to eat any and end up eating and then regretting. I know, I have zero self control. I blame V!

But then since I don’t have any self control when it comes to chocolates I try to make sure I eat healthy otherwise. Like these tofu burgers on homemade spinach whole wheat bread.

Sometimes when the TV is on during the day – which somehow isn’t too often these days (in the morning, that is, at primetime its a different case altogether with all the new seasons of my fav TV shows on), I do watch a cooking show or two (earlier the Food network was the only channel that was ever on in our house in the morning, but now the TV is hardly on). I have come to like this show on an Indian lifestyle channel called Love Bites with Joey. The host is this ex model, and even though I do not care for her presentation skills I do find her recipes fairly interesting. I have tried and posted about the Kerala style Fish Fry recipe adapted from her show, and honestly I couldn’t wait to share these Tofu burgers with you.

I know people have an aversion towards Tofu and the moment you mention it’s in a dish, people just look the other way. But seriously guys, take my word for it, you really wont feel like you are eating Tofu. I honestly did not have high hopes for the recipe, considering it was Tofu (not one of my favorite ingredients) but I was pleasantly surprised when I took a bite into these burgers. They tasted like any other veggie burger (let me be more specific- any other delicious veggie burger) you have had. Plus, its packed with lots and lots of protein. And if you have it on these homemade spinach buns, you have a chock-a-full good for you meal on your plate. Do give them a try, will ya and let me know how it goes.

For the spinach bun recipe, I just used my spinach bread recipe and instead of shaping the bread as a loaf, I made burger buns out of the dough. I also subbed 1/3 of the bread flour with whole wheat flour and added wheat germ to the recipe. Find the recipe HERE.

Tofu Burger on Homemade Spinach Buns-2

Tofu Burger Patties
 
Cuisine: fusion
Serves: 8-10 patties
Ingredients
  • 500 grams firm tofu, crumbled
  • 200 grams roasted almond crumbs ( I just used almond flour for convenience)
  • 100-120 grams chickpeas/ garbanzo beans (cooked)
  • 2 tbsp soy sauce
  • 3 tbsp vegetable oil
  • 2 garlic cloves, chopped
  • 1 tsp peri peri powder (optional, for the extra heat)
  • 1 tsp white wine vinegar
  • 1 tsp worcestershire sauce
  • 1 tsp chilli flakes (or more)
  • 1 cup bread crumbs
  • 1 tsp cumin seeds
  • 2 onions, finely chopped
  • 2 carrots, finely chopped
  • ½ stalk of celery, chopped
  • pinch of nutmeg
  • 1-2 tbsp tahini paste
  • Salt and pepper, to taste
Instructions
  1. Heat oil in a pan. Add the garlic and cumin. Saute for a few seconds.
  2. Add the carrots, celery, onion and saute for a few minutes, to sweat them out.
  3. Grate the nutmeg over the vegetable mixture.
  4. In a bowl, add tofu, chickpeas, soy sauce, roasted nut powder, tahini paste, salt, pepper, bread crumbs and mix well by hand.
  5. To the tofu mix, add the sauteed vegetables and fold.
  6. Mould the mixture into burger size patties and fry in the pan with some oil for 2-2½ minutes or till golden brown on both sides. (I actually baked these at 400 F for about 10-15 minutes on each side. If you plan to bake them just spray them with a little oil on both sides first)
  7. Toast the buns and serve with your favorite condiments and sauce.

  2. So does it make a fairly firm patty? My biggest complaint about veggie burgers is that the “mouth feel” is the same as for a bowl of slightly moist oatmeal cereal.
