My Favorite Apple Pie Recipe

There is nothing more comforting than a slice of apple pie. I love chocolate and believe me I do love it, but there is something about apple pie that screams to be eaten and can beat a chocolate dessert on certain days. Buttery and flaky crust, a sweet tart apple filling, beautiful lattice work or even the simple kinds, with a scoop of ice cream or without, apple pie is comfort food; the perfect comforting dessert.

I have been wanting to share this recipe for a while now and I am glad I have managed to do it this year before thanksgiving. I have made this recipe so many times that I have lost count. Generally a recipe that I make this often lands up on the blog sooner than later. But with this pie it took a while to have it up on the blog. Somehow whenever I made it, I was never able to photograph it. It always got over before I got a chance to shoot it. But finally I did get to take pictures of the finished pie and here I am today sharing the recipe for my favorite apple pie on the blog.

Whole wheat nankhatai | The novice HousewifeDuring the weekend we met up with our friends and one of them mentioned how she had made nankhatai for evening tea the other day. And that how quick it was. I was reminded how I had not made these eggless indian cookies for a while now and thought I should.

So yesterday I made them from a recipe that I posted 4 years back. The previously posted nankhatai recipe is now updated with a printable version and you can check it out here. A few people have used the recipe to give as diwali gifts too . Since diwali is not any time soon, you can just bake them for a nice evening time snack. The hint of cardamom combined with rich taste of ghee, make this cookies a great tea time treat. Generally made with all purpose flour, I use whole wheat to make them a little healthier.

Besides talking about nankhatai, we had a great weekend. V was out the whole week for work and came back on Saturday. Three of his Duke friends were also in town for the weekend and it was two days filled with drinking, eating and lot of fun.

There will always be people who will try to divert you from your dream. They will try to make your talents or your abilities feel inadequate. These people might be absolute strangers or they might be really close relatives/friends, who in their own respect, have your best interests in mind. Instead of getting angry at them or getting discouraged by them feel lucky because it is the negativity of these people that will help fuel the passion you have in your dream. Its their pessimism that will help build your belief in yourself. Its their attitude towards your dreams that will strengthen your resolve to prove them wrong.

If you give up when they say its not your cup of tea, you basically let them win and stay as someone who could never cross the finish line. Instead smile at them when they lecture you on how ludicrous your dream seems, and wish them the best in their life’s endeavours. And when they aren’t looking, work on your dream and cross that finish line. When you have accomplished what you had set out for and when your ideas start taking shape, send the people who discouraged you a thank you card. Because if it wasn’t for your will to prove these people wrong you would have probably given up eons ago.
