So I wont bore you yet again with I have been busy and apologize yet again for being MIA. I think thats just been so overdone on the blog lately. So let’s get past that and let’s concentrate on today’s recipe.

P.F Chang inspired chicken lettuce wraps.

Crazy easy to make and super delicious to eat. A great appetizer for parties or if you are trying to keep a check on your weight then the perfect meal. Plus, they are gluten free. You just have to make them. Like pronto. Even if you are a vegetarian, it shouldn’t stop you, because you can easily substitute the chicken for tofu. Been there, done that. So I can assure you it works. And works well.

The sudden urge to make lettuce wraps came by the other day when I went to Kylin, Chandigarh and ordered us some chicken lettuce wraps. They were good and they brought back wonderful memories of the PF. Changs lettuce wraps I have had in Phoenix. And the copy cat tofu recipe I made to take a potluck so that V would have something vegetarian to eat. They were so good that the meat lovers also had quite a bit of V’s dinner of lettuce wraps. Easy Chicken Pad See Ew recipe | The Novice Housewife #glutenfree

If you follow me on instagram, a while back I posted a picture of Pad See Ew my Indonesian friend had taught me. I taught her how to make a Louis Vuitton deco roll and in return she shared this easy Thai recipe made by stir frying rice noodles with certain sauces, chicken and chinese broccoli or napa cabbage. It literally takes 15 minutes to make from start to finish. I kid you not. Its the easiest meal to put on the table, even on a weeknight.

The best part of this dish is the  smokey flavor of the noodles, which my friend said you get by cooking this dish on high heat and charring the noodles nicely after the sauces have dried.

Chicken Wonton Soup | The Novice HousewifeMost days I cook because we need food on the table, but some days I cook to forget everything else. Today was one such day.

I have mentioned before (and even though I run a food blog) cooking is not my first love. Baking is. But today was just the kind of day when I wanted to be in the kitchen. The kitchen- its my me place. Where I can just let go. So I baked and cooked and cooked some more.
