Tofu Burger Patties

Serves: 8-10 patties
Ingredients
  • 500 grams firm tofu, crumbled
  • 200 grams roasted almond crumbs ( I just used almond flour for convenience)
  • 100-120 grams chickpeas/ garbanzo beans (cooked)
  • 2 tbsp soy sauce
  • 3 tbsp vegetable oil
  • 2 garlic cloves, chopped
  • 1 tsp peri peri powder (optional, for the extra heat)
  • 1 tsp white wine vinegar
  • 1 tsp worcestershire sauce
  • 1 tsp chilli flakes (or more)
  • 1 cup bread crumbs
  • 1 tsp cumin seeds
  • 2 onions, finely chopped
  • 2 carrots, finely chopped
  • ½ stalk of celery, chopped
  • pinch of nutmeg
  • 1-2 tbsp tahini paste
  • Salt and pepper, to taste
Instructions
  1. Heat oil in a pan. Add the garlic and cumin. Saute for a few seconds.
  2. Add the carrots, celery, onion and saute for a few minutes, to sweat them out.
  3. Grate the nutmeg over the vegetable mixture.
  4. In a bowl, add tofu, chickpeas, soy sauce, roasted nut powder, tahini paste, salt, pepper, bread crumbs and mix well by hand.
  5. To the tofu mix, add the sauteed vegetables and fold.
  6. Mould the mixture into burger size patties and fry in the pan with some oil for 2-2½ minutes or till golden brown on both sides. (I actually baked these at 400 F for about 10-15 minutes on each side. If you plan to bake them just spray them with a little oil on both sides first)
  7. Toast the buns and serve with your favorite condiments and sauce.
