Bacon and Cheddar Scones
 
 
Rich, tender scones loaded with cheese and bacon are perfect for brunch and dinner.

Ingredients
  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 1 tsp salt
  • 2 tsp baking powder
  • 2 tsp sugar
  • 4 tbsp cold butter, cut into small cubes
  • 1 cup cheddar cheese
  • ⅓ cup chives
  • 1 cup cooked, cooled and roughly chopped bacon
  • ¾ cup, plus 2 tbsp cream
Instructions
  1. Preheat oven to 190 C/425 F.
  2. Sift the flour, salt, baking powder together into a bowl. Add the sugar and whisk it all together.
  3. Work the butter into the flour until the mixture is crumbly.
  4. Add in the bacon and cheese. If using chives add that too.
  5. Add in ¾ cup cream and mix to combine. Try squeezing the dough together. If too crumbly add a little more cream. The dough should just come together, don’t over mix.
  6. Pat dough to a 7 inch disk, about ¾ th inch thick. Cut into wedges. I sometimes like my scones round, for that I use a round biscuit cutter..
  7. Brush scones with a little cream, it helps in browning the top.
  8. Bake for 22-25 minutes.
  9. Remove from oven.
