2 boneless, skinless chicken breasts (you could also use chicken on bone- I have tried that too and then grilled with the bone on, removed bones once cooked)
1 tbsp olive oil
juice of ½ lemon
1 tsp cumin powder
1 tsp chilli flakes, or to taste
1 tbsp steak seasoning (in case you don't have steak seasoning, you can use garlic and some herbs)
salt and pepper, to taste
For the salad:
1 zucchini, either spiralized, cut into ribbon or cut into thin slices
drizzle of olive oil
juice of ½ lemon
salt and pepper, to taste
1 onion, sliced
2 tbsp dried cranberries
2 tbsp slivered almonds
3 tbsp feta cheese, crumbled
Mint leaves, for garnish
Instructions
Marinate the chicken with the olive oil, lemon juice, cumin powder, chilli flakes and steak seasoning for 2 hours.
Grill chicken in the oven for 20-25 minutes at 200 C/ 400 F.
While the chicken is grilling, toss the spiralized zucchini in some olive oil, lemon juice, salt and pepper. Keep aside till chicken cooks.
Once the chicken is cooked and cooled slightly, add the grilled chicken, some crumbled feta cheese, onions, dried cranberries, almonds. Garnish with some mint leaves and enjoy.
