Blueberry Mojito (Video Recipe)

A quick and easy summer cocktail- twist on the classic mojito.
Serves: serves 1
Ingredients
  • 10 fresh mint leaves
  • ½ lime, cut into wedges
  • 1-2 tbsp mint syrup, or to taste (can use simple syrup too)
  • 1 cup ice cubes (I use blueberry mint ice cubes, recipe follows)
  • 60 ml white rum
  • 1 cup club soda
  • 40 gms blueberries (or a handful)
Blueberry-mint ice cubes
  • 2-3 blueberries
  • small sprig mint leaf
Instructions
  1. Place the mint leaves, blueberries and 1 lime wedge in a tall glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice.
  2. Add 2 more lime wedges and syrup, and muddle again to release the lime juice.
  3. Do not strain the mixture. Fill the glass almost to the top with ice.
  4. Pour the rum over the ice, and fill the glass with the soda.
  5. Stir, taste and add more syrup if desired.
  6. Garnish with remaining lime wedge and mint leaves.
For the ice cubes:
  1. Add 2-3 bluberries in each cavity of the ice cube tray. You can also add in some chopped up mint, or a sprig of mint leaf. Fill with water and freeze. Use in your blueberry mojito.
