Healthy granola recipe. The best base granola recipe to play around with and super easy to make. Will become your favorite granola recipe.

Serves: 6 cups
Ingredients
  • 4 cups old fashioned rolled oats
  • ½ tsp salt
  • ¾ tsp cinnamon
  • Pinch nutmeg
  • ½ cup almond flakes
  • ½ cup pumpkin seeds
  • ½ cup walnuts, crushed
  • ⅓ cup olive oil
  • ¼ cup honey
  • 1.5 tsp vanilla
  • ⅓ cup dried blueberries
  • ⅓ cup dried cranberries/ dried cherries
  • ¼ cup dark chocolate chips (optional)
  • ¼ cup raw cacao nibs (optional)
Instructions
  1. Preheat oven to 350 F or 180 C.
  2. Line a half sheet pan with baking paper.
  3. In a large enough bowl, combine the oats, walnuts, almonds and the seeds. Mix in the salt, cinnamon and nutmeg.
  4. Make a well in the centre. Pour in the oil, honey, and vanilla, stir the liquids a bit so that they are mixed a bit before mixing it in with the other ingredients. You could also whisk the liquids separately in a bowl before adding to the oats mix but I like it when the least number of bowls get dirty and this way the granola can be made entirely in one bowl.
  5. Make sure the oats mixture is coated well with the honey oil mixture.
  6. Transfer mix to the sheet pan and make an even layer.
  7. Bake for 20-25 min in the oven, making sure to stir half way through.
  8. Once baked, leave to cool in the pan, without stirring the mixture.
  9. Once cool, add your mix-ins like dried blueberries/cranberries and the chocolate chips and raw cacao nibs. Don't add the chocolate chips till the granola hasn't cooled else the chocolate will melt.
