This recipe for gajar ka halwa / gajrela yields a rich yet not so sweet halwa. Feel free to decrease the ghee or increase the sugar as per your liking. If you are not using condensed milk and instead would like to use sugar, use the same method of cooking but double the amount of milk, and use sugar (1/2 cup to ¾ cup sugar) after the ghee separates in place of condensed milk.

Ingredients
  • 4 tightly packed cups of grated carrot (about 500-600 gms carrots)
  • 2 cups milk
  • ½ cup cup ghee
  • ½ can of 400gm condensed milk
  • handful of cashews
  • a pinch ground cardamom
  • few roasted cashews, for garnish
Instructions
  1. Peel and grate the carrots.
  2. In a kadhai/pan, add the milk and grated carrots and cook on low-medium heat till the milk evaporates completely, about 20-25 minutes. Keep stirring to make sure the carrots are not sticking to the bottom.
  3. Add the ghee and cook till the ghee separates, another 15-20 minutes.
  4. Add the condensed milk, cardamom powder and cook for another 10-15 minutes. Add the chopped cashews (and other nuts if you like) and cook for 5-8 minutes till the ghee starts appearing on the side.
  5. Garnish with a few roasted cashews and serve hot.
