Eggless sugar cookies-4

This is going to be a “super” quick one (I had to use the word super, you know since its superbowl sunday). One because my wrist is not allowing me to type too much. Two, today is Downton Abbey and Sherlock Day (besides Superbowl Sunday). And three I am way too tired. But since I had promised my friend that I will be posting this recipe soon, I am here keeping that promise.

A while back when I had posted about a sugar cookie recipe (with eggs), somebody else had also asked for an eggless sugar cookie recipe. This one is also for you.

Taste wise these were pretty good. Actually very good. Would not have guessed they were eggless and I ended up having quite a few while “taste-testing”. I wasn’t too adventurous with the shape (and will definitely get back to you when I have tested this recipe with more complicated shapes) but the recipe did hold the square and round shape pretty well and there was no spreading. Its also a very easy recipe to throw together and with results this good, you definitely should try it. And do let me know how it goes!

Eggless coconut cupcakes with cream cheese frosting | The Novice HousewifeSo I am aware that I am kind of cheating by sharing this recipe for eggless coconut cupcakes under Garam Masala Tuesdays.  “Kind of” because I have a reason why I am sharing the recipe today so it is not entirely cheating. But cheating nonetheless because we all know that cupcakes are anything but Indian.

Yes, you might have Indian spices inspired cupcakes- but cupcakes in general are not Indian and they can not be categorized as Indian.

Which actually led me to think- are there any traditional Indian desserts that are baked? I had a hard time coming up with any that is baked and maybe I am overlooking something obvious, but would the Indian readers of this blog let me know of traditional Indian baked goods if they think of any. The ones that I can think of are either fried or cooked. The closest I can think of a baked dessert is shahi tukda, where you fry bread (which has obviously been baked before) and serve it with flavored thickened milk. Other than that I draw a blank. What about you?

While holidays are fun, they do bring with them the perfect conditions to increase your waistline. Everybody has the holiday cheer on, so there is drinking and more drinking accompanied by eating and a lot more eating, followed by dessert and some more dessert. The weighing scale is my worst enemy these days.

I think its very clever that new years falls after christmas- first falter by over eating and then make amends by making resolutions to lose the weight you gained during the holiday season. Of course, if you are like me, those kind of resolutions come with an expiry date of a week.

Adding to your calorie intake are these lemon-y eggless cookies that I am sharing with you today. Since a lot of people ask me for eggless cake, cookie recipes I thought I would share this one out while the holiday season still gives you the excuse to bake some in your kitchen. Christmas brings out the cookie monster in all of us and even though I might be a little late in sharing this recipe with you this year, I am a year ahead in sharing the recipe for next year’s christmas round up. So pin it, share it, save it for your next year Christmas baking to-dos.

Of course, you could make them anytime of the year. Or when it is time to break your new year resolution of weight loss, you could bring these bad boys out. Just saying. Don’t blame me if you do though.
