So… its been a while.

More than a year. 

I have been irregular for a while on the blog, but I still would wake up after a few months to post. But to not post an entire year (the last post was January 2021), that’s a first.

I have no excuse except I did not feel like writing. The convenience of posting a picture and sharing a recipe if someone wants it on my instagram page was more tempting. Not that I was doing that often either. My postings on instagram have not been very consistent- the addition of reels to the platform hasn’t helped, even though I do like making videos. I started making videos in 2013 and making food videos is what started my career in photography when I moved back to India in 2016. But that was when there was no one making it. And while I am thoroughly entertained by reels (pet reels are my stress buster), I hate that most of the feed is the same song played repeatedly with people dancing on the same steps. Not to say there is not good quality content on that platform. Instagram was always aspirational, but it did come to become a little overwhelming for me. Content creators churning new content every day. And that too video content- which to my old school brain takes time to conceptualize, shoot, edit, find music (!). For someone who has always been used to working alone, it became overwhelming to manage everything and delivering so much.

While the first wave of covid saw me productive as never before, I soon could not keep up. So the recipes stopped. The personal projects stopped. And the silence took over. Photography, styling and video work for clients went on. But creatively I felt lost. I felt lost in general. I still feel do. 

I am trying to revive this space. While I had not been posting, I did discover some new recipes along the way. Some were shared on instagram, but I feel they all deserve a more permanent space too. Today I am sharing the recipe for these quick and easy to make mango jalapeño margaritas.

Mango Jalapeno Margarita

This spicy margarita drink was something I first tried at a restaurant in Dallas, and soon became a favorite. During the first lockdown, A and I worked on this recipe and while I posted the recipe for these mango jalapeno margaritas on instagram, it deserves a permanent blog space. 

Ingredients required for this spicy margarita cocktail:

  • Tequila
  • Cointreau (or any other orange liqueur)
  • Lime juice
  • Mango – you need the pulp and a few fresh pieces for the garnish
  • Jalapeños (if fresh are not available, I have used the jar ones also successfully)
  • Chilli salt- to rim your glasses (if you have tajin that works too, but make your own chilli salt with red chili powder/paprika and salt. I use pink salt, but regular will also do.

Beat the summer heat with this easy, quick mango passionfruit ice cream. Fret not if you don’t have an ice cream maker because this recipe yields a creamy, yet fresh ice cream even without one.

Easy Mango Passionfruit Ice cream recipe (eggless)

Mango season is upon us here in India, which means a lot of Mango recipes coming your way. Nothing screams summer louder than this mango passionfruit ice cream. It’s bursting with the fresh and refreshing flavors of mangoes, and with a slight tang of passionfruit. A perfect treat for the summer heat.

A few years back, when I was still in US, I had visited India during the summer months. Häagen-Dazs had just opened its first outlet in Delhi and I went to try it out. They had certain local flavors and mango passionfruit ice cream was one of them. I had never eaten passionfruit anything before and when I tested the mango passionfruit ice cream, I was sold. It was tangy, creamy yet refreshing. The flavors were fresh and since then I have been meaning to recreate that flavor combination of mango and passionfruit at home.

Easy Mango Passionfruit Ice cream recipe (eggless)

I had some frozen passionfruit puree left from the time I made the passionfruit ice cream. When mango season hit, it was one of the first things I set out to make. Its weird how tastes evolve as we grow older. As a kid I hated mangoes- I didn’t like the mess that came with eating mangoes (In India, we use our hands and mouth to eat mangoes, and it gets messy). Now, I don’t mind the mess and in fact love mangoes. They work very well in desserts, and the possibilities are endless.

This recipe is easy. Just a whiz in the blender and you are set. I used an ice cream maker (this one), but in case you don’t have one you can still get good results. The addition of milk powder is what keeps this ice creamy and keeps it from forming ice crystals.

Easy Mango Passionfruit Ice cream recipe (eggless)

Mango Passionfruit Ice Cream {eggless}
 
Serves: serves 10-12
Ingredients
  • 1 cup passionfruit puree
  • Pulp of 2 mangoes
  • 1 can (400ml) coconut milk
  • 1 can (400gms) condensed milk
  • 1 cup mascarpone cheese
  • ¼ cup milk powder
Instructions
  1. Blend all the ingredients together in a blender till well combined. Transfer to ice cream maker and freeze according to the manufacturer's instructions.
  2. To make this ice cream without an ice cream maker, after you have blended all the ingredients, either transfer it in into the container that you plan to freeze the ice cream in, or if you have enough freezer space leave the blended ice cream in the blender. After 45min- 1 hour check on it and if you see the mixture freezing at the edges, remove from freezer and give it a whizz. Repeat process 3-4 times and then transfer to the container you want the ice cream to freeze in and let freeze completely.

Mango Lime Tart | The Novice Housewife

Mangoes are the most beloved fruit in India and thus hold the proud title of India’s national fruit. You can find mango trees by the dozen in most places in India and gorging on the sweet and aromatic juices of a mango is one of the few pluses of this scorching Indian heat (temperature are almost touching 49°C/ 120 ° F!!).

Even though mangoes are grown in several places across the globe, Indian varieties are the most sought after with Alphonso (or Hapuz as known by Indians) topping the list.

Come April, and roadside vendors, fruit and vegetable markets are all flocked with this juicy fruit. And with the recent EU ban on Indian mangoes till December 2015 (seriously, what’s wrong with these people to ban such a popular fruit! ), prices of premium mangoes have decreased in local markets which is a sweet welcome for us mango lovers.

So its only fair that most is made of this green and yellow fruit while its season lasts till July and this Mango and Lime Tart gives this fruit absolute justice.
