I won’t be posting on GMT this week. It’s just that I have a ton of recipes in my drafts, so I decided this week I’ll catch up on the backlog of posts I have.

My basil plant has been flourishing and I had tons of basil leaves. Of course, I had to make pesto. While looking for ways to use that pesto, I stumbled upon Brown eyed Baker’s Portobello pesto pizza.

I love Michelle’s site and she has a ton of great recipes to choose from. Luckily, I had some frozen homemade pizza dough that I needed to use up and this recipe fit the bill perfectly.

Happy Fool’s Day! I am not a great prankster- though I have done my share of pranks on people- some really good ones. There’s one in particular, where I pulled a prank on my friend G- though looking back at it now- it was not a good thing playing with her feelings like that. Sorry G!

Today I thought I would make a fool out of V- and it did work for a few minutes but then he realised the date and blew my cover! And that’s it- somehow my brains nor my mom’s have been able to come up with something believable to fool people. I blame it on the massage I went for in the morning (like a true capricorn girl, there’s always something I can put blame on). The massage has left me too relaxed to get those brain cells to work. What’s with the massage, you ask? Well, since I’m in Kerala- the land of ayurvedic massages- I am on a week long detoxification program- 7 days of early morning(!) hour long massages!! This is what vacations are all about!!:)

My mom is also undergoing a treatment at the same place. Of course her reasons are different. She has osteo-arthiritis and the massage center has a course where they use certain techniques that help cases like her’s. Its a 3 week long course where in the first week certain special herbs, put in a potli (a small sack), are dipped in hot oil and then rubbed all over the body. The second week they put some kind of medicinal rice in the potli and dipped in oil, they rub it on the whole body. The third week is a massage with  an ayurvedic oil. Along side,  some ayurvedic medicines are given to cleanse the internal system. An old lady does the massage and oh boy she has some strength! My mom’s massage is more gentle, considering her condition- but mine wasn’t- nonetheless it felt nice!

I did get to some baking yesterday. My mom had some friends of hers coming home for tea in the evening and thought it would be the perfect time to make something. So I baked a lemon pound cake, some mocha chocolate chip cookies and these caramelized onion tartlets.

The tartlet shells are such a breeze to make and they are made with just one ingredient- well make that two if you count the 1 tablespoon butter. No! it’s not an april fool day’s joke- its actually true. The tart shells are made of rolled out bread slices. Add any filling to it and you have a great snack on your hand to serve for your guests or well, to eat it on your own!

Edited to add on May 3, 2018: This recipe for creamy spinach mushroom fettuccine went live first in August 2010. The recipe is from a special edition that Femina India had come out with that showcased restaurant favorite recipes including this one for mushroom fettuccine. I have made this pasta recipe several times since then but forgot to update the blog. I have also lightened up the mushroom fettuccine a bit from the original one. Its still not a calorie free recipe but it tastes delicious so I am not complaining. The pictures have been updated, and like all previous posts that I reshoot, original pics have been kept too to keep reminding me where I started and how far I have come. The pasta in the pictures above is also homemade and I used The Prairie Homestead’s fresh pasta recipe

I finally completed my second trunk yesterday. With that, Project Trunk is under wraps! Finally! This called for a celebration!

I had mushrooms lying in my fridge for some time now. V hates mushrooms- well hate would be too strong a word, but he is NOT a fan. I like mushrooms a lot. But, its quite ironical that growing up, I hated all dishes that had mushrooms in them.

Then, one fateful day (boy, do I like to dramatize things!), my friend from college, called us for lunch at her home. She made this garlic mushroom bread that was awesome and since then I have been in love with mushrooms.

Lot of people believe that it takes one dish to change a person’s opinion about a vegetable. And, I am a living proof of that!

So I thought I’ll try to get V to change his mind about mushrooms, and decided to make this pasta recipe I got from a special cookbook edition of Femina. The recipe is the same one that they use at Pizza Hut for their creamy Spinach Mushroom fettuccine. The first time I tried this recipe was while visiting home, and I made it for a party my parents were throwing. Everyone loved it. I made it again at my aunt’s place- it didn’t come out as good as the first time- there were some ingredient issues- but still was liked.

This was my third time, and this time the dish had a mission- to turn V to a mushroom lover. I had to get this one right! So, I set the table and went all out- they say people eat with their eyes first and I hoped that for V the first impression would be the last one.

V loved it- a lot! Proof..u ask? Look at the pics at the end. Its still too early to say whether he is a mushroom convert, but well, its safe to say that he will happily eat this dish again.

It does use a lot of cream though- but luckily, I had just one small packet of cream, and thus could not use the whole amount asked for. It still turned out great.
