I would have posted the recipe sooner, but my computer just kept playing spoil sport. I have finally upgraded the RAM, and now it seems to be working fine, and the internet which stopped working yesterday, is back on, so hopefully I will be back to blogging and sharing recipes with you again.

Its pretty difficult to write a post about cooked food because this salad was also my big send off to raw week. Which means while I am typing this recipe I have been on raw food for 4 days now. The idea of a chicken tikka salad has been playing in my mind for a long time (while writing this post I googled it, and apparently there are other versions as well, so I am not the only one to have thought of it) and finally I got around to making it a few days before.

There are not many salad recipes in Indian cuisine. The only one I can think of is Kachumbar– which is basically a salad made from small tiny pieces of vegetables, mainly cucumber, tomatoes, onions with chillies and cilantro/coriander leaves added to it. Besides that I draw a blank although salads do feature in indian meals- its just plain cucumbers, tomatoes and onions sliced and served on a plate with maybe a lemon, salt and pepper dressing. But other than that I can’t think of any. (If you can, please do leave a comment below)

Unlike other Indian salads, like the ones I mentioned above, which are normally served alongside main course dishes, to provide a slight crunch to the meal, this chicken tikka salad is a meal in itself. But much lighter than a full fledged Indian meal. And great for the times when you want a lighter Indian flavor meal.

Mexican Pasta Salad

A cloudy and windy Saturday (Sadly, no rains though)

A walk to the theatre to see Man of Steel (which I enjoyed watching)

A lazy Sunday spent meal planning and grocery shopping (my first time doing a meal plan for the week)

And, eating this mexican pasta salad for lunch today. All of this and more made it a weekend well spent. 🙂

The first time I made this easy pasta salad was for my coffee group friends and everyone enjoyed it. In fact it got my friends’ kids’ approval as well, and one of them is only 15 months old. And I think anything that gets a kid’s approval is a recipe to keep. Just make sure you reduce the spice to make the recipe more kid friendly.
