Call these breakfast hummus wraps- tacos/ burritos or just wraps but make them. They are easy, quick to make and packed with nutrition. Easy to make ahead, and pack it for breakfast, lunch or have them as a quick no fuss dinner.

Breakfast Hummus wrapsI love breakfast. And I love planning for it. Its so important to have a filling breakfast- sets the pace going for the day. These breakfast hummus wraps are so easy to make, yet they pack so much that you are good to go till lunch.

I feel most recipes are only guide lines, and the possibilities are endless to make them your own. Case in point- these breakfast hummus wraps/burritos. They are so easy to customize, and so many different options to try. You could use scrambled paneer instead of eggs to give it a vegetarian spin. You could add some sautéed mushrooms, black beans or even bacon or sausages. While I find them quick enough to whip up in the morning, but once our busy schedule starts again, you could also make these ahead and freeze them wrapped in parchment paper.

While we have been mainly having a single wrap for our breakfast, these breakfast hummus wraps would make a great lunch or even dinner option. You could use store bought tortilla, or make your own wraps with roti dough like I did.

Store bought hummus is fine, but as the title wrap this is a HUMMUS wrap, so make sure if you are not making your own you get the one you like the most.

Side note: it really is easy to make hummus- only thing is that it does require some prep time- soaking chickpeas, pressure cooking them, peeling the skin off for smooth hummus. You could use canned chickpeas to save time. The other components of a good hummus are tahini, lemon juice, garlic, olive oil, cumin and a few cubes of ice. Trust me on this- ice cubes lend a nice creamy texture to the hummus. So does removing the skins, though it is not absolutely necessary if you have a good blender. For the taste, make sure you use the best olive oil, and lots of tahini. I am not big on sesame seeds, but hummus needs tahini and a generous amount does elevate the taste. I realize I don’t have a recipe on the blog yet, because I always add according to the boiled chickpeas I am using, and haven’t yet written the measurements down. Next time will measure so that I can share the recipe with you.

The idea for these breakfast hummus wraps actually came when I had leftover hummus from the pita falafel wraps and a mezze platter I had made. The platter had homemade falafels, homemade pita, homemade hummus among other things. You can find the recipe for the homemade falafels here. The recipe for pita and hummus is pending and have made a note to post about them soon.

Its Lockdown 3.0 in India. Things are slowly opening, and while its important to open the economy gradually, the problem with India is thanks to the population nothing can happen gradually. How do you contain more than 1.3 billion people without a complete lockdown. Its not possible and given how quickly the virus spreads, we might be heading to a big rise in the number of cases soon, if people do not restrict their activities to the absolute essential wherever possible. While there are many who have the luxury of working from home and getting paid, there are many those who needed the lockdown to be lifted so that they can resume their livelihood. Since there might be no fool proof cure for months, and a vaccine could take years, living in lockdown is also not possible. I do hope the last 40 days did help give the government time to improve the health care system, have a more thoroughly laid out plan to deal with new cases that will spring up in the coming weeks and also place a strategy to minimize the spread as much as possible by identifying potential patients immediately and putting an effective self quarantine system in place.

While on one hand we are all battling with Covid-19, on the other hand you hear stories of Bois Locker group doing the rounds. I don’t think just blaming the parents for actions of their kids is fair especially because its difficult to control every activity of children these days, and you can not encroach on their privacy but yes our patriarchal society ( and I do not mean just Indians- this attitude is prevalent every where), does justify slut shaming, and objectifying what people consider “bold” women. We are always teaching our girls how to behave, or how to dress or how to act in public. Why do we not take out time to teach our boys to respect girls, what the right way is to behave with women and what all qualifies as sexual harassment and absolutely will not fly in the house or outside. There are no guidelines for men, but plenty for the women and girls. Why don’t we punish our boys when they behave and talk such obscene things and instead choose to only victim blame. Fine you have a problem with the way a girl dresses- you want to criticize, you do that (for the case of argument, I will give you that) but can you not also see that using such obscene language to describe them or to post their nude photos online is WRONG and can not be justified as boys will be boys attitude?

These boys of the Bois Locker group were all from “good” schools, so I am assuming they come from educated backgrounds and are getting quality education. Clearly our education and family system is lacking in creating respectable men. Clearly, we need to change that. If this can happen when our kids are at home, with us at all time, and we fail to notice it we need to change it- and change it immediately. We need to understand how our actions knowingly or unknowingly nurtured such atrocious thinking. We need to have conversations of right and wrong constantly with our sons and daughters. Not only when such cases arise, but on a regular basis. And we can not normalize such  behavior. We need to make that clear. Whether we are the victim or the by stander, we need to be vocal about it. And in case we know the perpetrator, we need to have a serious talk with them. Its not always easy. But we should try. And we need to make the advice equal- if you lecture the girl on how to behave or appear in public and in private, lecture the boys and men too. Its only fair.

Covid-19 has put us all to think about our choices, our way of life. I think the way we treat women- at homes, outside also needs to be given a hard look and it needs a drastic overhaul. When our dads cook we praise every dish with so much fervor. Our moms cooking is on most days overlooked- we might appreciate it but we do not celebrate it the way we do a single dish made by the male member of the family. We take the woman’s effort for granted. I am guilty of it- more so growing up than now. I have tried to change it now that I have a house of my own and know how much effort can go unappreciated. Its sad that it took me to be under the same situation to appreciate my mother’s sacrifices and efforts. And home is where it all starts.

Men are celebrated for cleaning- what a good husband. The wife does it. Well thats her job. Women living alone- taking care of every aspect of the household- not a big deal- you should be able to take care of your own house on your own. Men living alone- managing cooking, cleaning and work at home on their own- oh poor boy how will he manage, maybe its time he gets a wife and settles down. Well he too should learn to manage the same way the woman is expected to- ON HIS OWN. These gender roles need to stop and stop NOW.

Today’s men might help out their partners- but there’s a problem there too- they help when they are asked to. When they are given a task. But why do they need to be asked. Who asks the woman. There is not a big issue in asking, its just that it makes it the women’s duty to keep the house together, and that she is delegating. If the house is theirs, why don’t the men take down their role more seriously. No one at their work place needs to daily remind them of their roles. Why then, in the house it needs such reminders.

I rarely discuss stuff outside food on the blog. This space is meant for my recipes. But sometimes there are thoughts that I want to pen down, and well today was one such day. I hope these things made some sense to you. Do pause for a minute and think how we can unlearn the years of patriarchy and make this world a safer place for both men and women, and for the future generation to grow as respectable individuals. And while you are thinking about that, make these breakfast hummus wraps.

Stay safe, stay healthy and respect people.

Recipe type: Breakfast
Serves: makes 4 wraps
Ingredients
  • 4 whole wheat tortillas
  • 4 eggs
  • 1 tsp dried oregano
  • 1 tsp olive oil
  • 2 tsp vinegar
  • 1 tbsp butter
  • ½ cup hummus
  • Salt and pepper
  • 2-3 tbsp Coriander/cilantro, washed and chopped
  • ½ yellow bell pepper, sliced
  • 1 onion, sliced
  • 2-3 tbsp shredded cheese- I used cheddar
  • ½ cup lettuce, coarsely chopped
  • Few drops of Hot sauce (I used tabasco)
Instructions
For the tortillas:
  1. Toast the tortillas in a skillet over medium heat. I used regular whole wheat chappati dough to make my version of tortillas and they work perfectly. Keep the tortillas warm in casserole.
For the sautéed onions and peppers:
  1. In another pan (or the same one), heat 1 tsp olive oil. Add the sliced bell pepper and onions, and sauté on high flame for a minute till they are slightly charred. Add the vinegar, and mix well. Remove from heat. Season with salt and pepper. Keep aside.
For the eggs:
  1. In a bowl, whisk the eggs until combined.
  2. Add the butter to the pan and melt over medium-low heat.
  3. Pour in the whisked eggs. Gently scramble the eggs, taking care not to over stir, until they are mostly set and still moist. Season with a pinch of salt and pepper. Remove from the pan to a bowl
Building the wraps/tacos/burritos:
  1. Spread about 2 tbsp hummus on the tortilla.
  2. Add about one egg-worth of scrambled eggs, followed by your desired toppings- lettuce, onions, bell pepper, cheese, coriander/cilantro, hot sauce.
  3. Fold to make a wrap, and serve immediately.
Variations:
  1. For a vegetarian spin, use scrambled paneer instead of egg.
  2. You could add some sautéed mushrooms, black beans or even bacon or sausages.
  3. You could top them with homemade salsa.
  4. Baby spinach, cucumber, microgreens and some avocado would be great too.
